Patty Muckala's Icebox Cinnamon Muffins




20 medium muffins
*melt the butter first so that it's cooled down by the time you add it in

Preheat oven to 350 degrees

2 cups flour
2 Tablespoons cinnamon
pinch salt
4 teaspoons baking powder
1 cup sugar
1 cup milk
1/2 cup butter, melted
2 eggs, beaten
1/2 cups nuts

Sift flour twice, then sift with salt, cinnamon and baking powder. Add remaining ingredients and mix. 

Store in refrigerator or put in greased muffin pans and bake at  for 20-25 minutes.

This may be stored in refrigerator for 4 days, with batter used cold from frigerator and baked immediately.

  1. Nice! Very cinnamon-y. AND YES, I did sift the flour twice and then once again with the other ingredients!
