I recall mom writing down this recipe as she was talking to Russ on the phone right before Christmas one year. The paper has tell-tale signs of Kaye's "listening' habits", her bubbly doodle marks namely.
Russ or Kelcey, you'll have to help me fill in the details on this recipe!
1/2 lb bacon diced in1/2 inch pieces
2-3 oz. ham diced in 1/2 inch pieces
2 Tbs butter
2 cups chopped onions
1/4 red pepper, chopped
3 Tbs. flour
6 cups milk
3 c. [peeled] potato, diced 1/2 inch
1 8-oz bottle clam juice
3 cups minced clams
1/2 lb. bay scallops
salt and freshly ground black pepper
chopped parsley for garnish
Saute bacon til crisp, drain fat. Reserve bacon and ham (I'm assuming you saute the ham with the bacon?)
Add butter, onion, red pepper and saute 10 minutes.
Add flour, stir in for 1 minute.
Add milk and potatoes and cook until mostly soft- (be careful of milk)
Add the rest- clam juice, clams, scallops. Cook 5 minutes or more.
Add ham and bacon.
Kaye also had written, "Add Oyster crackers and popcorn shrimp"
