English Shortbread




This traditional English Christmas treat is simple but delicious.  It's also a traditional gift cookie that is always appreciated.

Makes about 20 pieces

2/3 cup butter

1/2 cup powdered sugar 

1 1/2 cups plus 2 tablespoons flour

1/2 teaspoon salt

granulated sugar



Preheat oven to 325 degrees.

Cream butter.  Add sugar and beat until fluffy.  

Combine flour and salt.  Stir into butter and sugar.  The dough will become quite stiff and you may have to do the final mixing with your hands.  

Roll out dough. Cut into strips about three-fourths inch wide and two inches long.  

Place on ungreased cookie sheet.  Prick cookie with a fork about three times on each piece.

Sprinkle with granulated sugar.  Bake for bout 45 minutes until light tan, but not at all brown.
