*Banana Mousse

CHUTNEY-CURRY HORS D'OEVRES

Mix one 8 oz. pkg. of cream cheese with 3/4 tsp. curry powder to give color and flavor.  Transfer to serving bowl and cover top with a very generous layer of chutney and slivered toasted almonjds.  1 tsp. grated toasted coconut is a nice addition also.  Serve with crackers

Frozen Banana Mousse

3 ripe bananas, well mashed                              pinch of salt
1/2 cup sugar                                                    2 Tbs Cointreau
1/4 cup orange juice                                          1 cup whipped cream
1/4 cup lemon juice

Mix all ingredients with exception of cream.
Whip cream to consistency of other mixture.
Mix together.  Transfer mixture to metal mold or individual molds and freeze.  Unmold on a bed of chopped nuts for Erika.

Doesn't look like how Kaye did it but it gives me an idea for another way to present this dessert

  1. Ironically, I now find the recipes from "From a Tokyo Kitchen" far easier to do now. I don't have to go to specialty stores for the ingredients! And, I am familiar with the ingredients which i once thought were "exotic", like spices.....
