Broiled Chicken Breasts with Soy sauce marinade

Preheat the broiler, positioning the rack 4 inches from the heat.



Marinade:
1 Tablespoon soy sauce
2 tsp. prepared mustard
2 tsp (scant) lemon juice
garlic (one clove)

Marinate chicken breasts for at least one hour. 
Transfer the chicken breasts from the marinade to jelly roll pans or cookie sheets.


Place on rack in shallow pan in broiler on medium and broil 8-10 minutes on each side (internal temperature of 165 degrees).


The directions are scant on many of these recipe cards so I'm also looking up similar recipes on-line to fill out the directions.

*Alternately, the chicken can be baked using the following directions:
When ready to cook the chicken, preheat the oven to 350° F. Place the chicken breasts in a baking dish and pour the excess marinade over them. Bake in the oven until cooked through and the internal temperature reaches 165° F, about 45 minutes (exact baking time will depend on the size of your chicken pieces.) Remove from the oven and let rest for 5 minutes before serving.
