Easy Cornbread- two recipes

Heat oven to 400 degrees F.  
Grease 8 or 9-inch pan
9 servings



1 1/4 cups all-purpose flour
3/4 cup corn meal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup skim milk
1/4 cup vegetable oil
2 egg whites or 1 egg, beaten

Combine dry ingredients,  Stir in milk, oik and egg, mixing just until dry ingredients are moistened.
Pour batter into prepared pan.

Bake 20 to 25 minutes or until ight glden brown and wooden pick inserted in center comes out clean.

Serve warm   

*Corn muffin variation:  pour batter into 12 greased or paper-lined medium muffin cups. Bake 15-20 minutes until golden brown.

Cornbread


Makes 9 squares of cornbread or 10-12 muffins 

INGREDIENTS

  • 1 C cornmeal
  • 1 C flour (may use part or all whole wheat)
  • 4 t baking powder
  • 1/2 t salt
  • 2 T brown sugar
  • 2 beaten eggs
  • 1 C milk
  • 1/4 C oil

DIRECTIONS

    Pre-heat oven to 400° C.

    Sift together dry ingredients.

    Make a well and add remaining ingredients.
  • 4
    Pour into greased pan and bake 20 minutes.
