Easy Date Cookies

Ingredients

  • 1 egg & I egg yolk
  • 1 tsp vanilla or vanilla bean paste
  • 1/2 C sugar
  • 1/2 C melted butter, unsalted
  • 1 1/2 C AP flour
  • 1/2 C ww flour (Einkorn works)
  • 1 tsp baking powder
  • 2 T milk powder (Optional)
Date Paste Filling:
  • 200 g pitted dates
  • 1 T ghee
  • Ground cinnamon
  • Orange Blossom water 
Instructions
Preheat oven to 430 degrees
  1. Prepare Filling. Steam dates until soft and puree with an immersion blender. Add Ghee, cinnamon and orange blossom water. Set aside.
  2. Prepare Cookie dough: In a large bowl whisk the eggs. Add sugar & vanilla and whisk until sugar dissolves. Add melted butter & whisk. 
  3. Add dry ingredients: flour, baking powder, milk powder (optional). 
  4. Stir until uniform dough forms. 
  5. Take a large ball of dough and roll it out until it's 1/2 inch think, and cut the edges to form a large square. Spread a layer of date paste on top. Take a second ball of dough and form another square and place it on top of the date paste. 
  6. Slice the cookies into small squares. Press designs into the top cookie layer if desired. 
  7. Bake for 10 minutes--rotate part way through and switch racks.
