Ingredients
- 1 egg & I egg yolk
- 1 tsp vanilla or vanilla bean paste
- 1/2 C sugar
- 1/2 C melted butter, unsalted
- 1 1/2 C AP flour
- 1/2 C ww flour (Einkorn works)
- 1 tsp baking powder
- 2 T milk powder (Optional)
Date Paste Filling:
- 200 g pitted dates
- 1 T ghee
- Ground cinnamon
- Orange Blossom water
Instructions
Preheat oven to 430 degrees
- Prepare Filling. Steam dates until soft and puree with an immersion blender. Add Ghee, cinnamon and orange blossom water. Set aside.
- Prepare Cookie dough: In a large bowl whisk the eggs. Add sugar & vanilla and whisk until sugar dissolves. Add melted butter & whisk.
- Add dry ingredients: flour, baking powder, milk powder (optional).
- Stir until uniform dough forms.
- Take a large ball of dough and roll it out until it's 1/2 inch think, and cut the edges to form a large square. Spread a layer of date paste on top. Take a second ball of dough and form another square and place it on top of the date paste.
- Slice the cookies into small squares. Press designs into the top cookie layer if desired.
- Bake for 10 minutes--rotate part way through and switch racks.
